Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighbourhood's vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. We’ve also got three distinct restaurants led by award-winning culinary pros, including celebrated Copenhagen-based Australian chef, Beau Clugston's  Kiln; our oasis for fresh, seasonal fare called LOAM; and a day-to-night laneway café, Good Chemistry. About Kiln

Recently reopened with a fresh new menu, Beau Clugston takes to reinvent the iconic location upon the 18th floor of one of Sydney's renowned hotels. Kiln offers a truly elevated dining experience that stands out in the city’s vibrant culinary scene. With open terraces, stunning views, an open kitchen featuring a woodfire hearth, and spaces such as a bar, lounge, and private dining area, where DJ beats amplify the vibrant atmosphere. 

Our dishes capture the essence of the open flame, smoke, and smoulder from the wood-burning grill. Designed for sharing, the menu evolves with the seasons, featuring sustainably sourced ingredients. Seating up to 120 guests, offering both restaurant and bar areas, Kiln provides the ideal setting to relax and soak in the atmosphere even after dining.

About the Role

Blending hospitality with culinary expertise, we’re on the hunt for a casual Chef de Partie to support our award-winning kitchen team. From lunch through dinner, you’ll help bring unforgettable dining moments to life with creativity, precision, and flair. Stepping into a vibrant open kitchen warmed by the glow of a wood fire, you’ll craft dishes that dance with flame—and take charge of your section with confidence, keeping service smooth and standards high.

 

About  you

You're a calm and positive team player with a passion for food and a genuine desire to deliver memorable dining experiences. Confident across both sweet and savoury sections, you're available Saturdays and bring a flexible and collaborative spirit to every shift. You communicate clearly with both the kitchen and front of house teams, which is crucial in our open kitchen environment where seamless service and beautifully executed dishes go hand in hand. You have prior experience as a Chef de Partie in a high volume and quality driven restaurant, with a solid grip on ordering, stock management and training. Experience in a hatted or wood fired kitchen is a bonus but not essential. Most importantly, you understand the importance of a safe and well run kitchen and hold a current food safety certificate.
